Joie en Cuisine was founded in 2025 by Evelyne Schichner and Lilly Milman. Our philosophy is simple: There should always be joy in your kitchen, even when it comes to learning complex French recipes. Both our in-person and online classes prioritize learning technique and understanding the why and how of French cuisine. Bakers of all levels are welcome to come learn, eat, and enjoy, whether it’s your first time holding a rolling pin or your hundredth.

Meet Evelyn Schichner
Evelyn Schichner has been teaching French cooking and baking classes in Boston for over 5 years, to rave reviews. She honed her technique at renowned cooking schools in Paris, including L’ecole Ritz-Escoffier. She draws inspiration from Julia Child, who she was fortunate enough to meet in person several times, and to whom her students frequently compare her
Meet Lilly Milman
Lilly Milman has been a home baker all her life. Her interest in French baking was sparked when she met Evelyne three years ago as a kitchen assistant at the Cambridge Center of Adult Education — and the two have been inseparable ever since. She has assisted Evelyne in teaching dozens of classes on how to make macarons, classic French breads, various patisserie, and more.
Featured Classes
We currently offer classes online, and soon in person at our Boston location. Online courses are asynchronous and hosted on the platform Teachable. When you purchase an online course, you will be able to re-watch the class and download the recipes as many times as you’d like.
